I know Milliways has a fluid sort of space but does it change dynamically? I imagine those who have what we call normal human senses wouldn't notice it changing but if a character had an echolocation sense that evolved specifically to notice space and physical objects around them, would that character notice?

I'm inclined to say yes and that maybe it causes a mild sort of vertigo to the poor character. Nothing more profound than a minor case of motion sickness but something noticeable.

And I may have a new head voice glaring at me now.

When I played Whistler, I regularly had Whistler complain that the echoes were different from one visit to the next, sometimes from one trip upstairs and back down again to the next. It played hell with his attempts to install a perfect sound system. So yeah, a true echolocator would almost certainly notice.
