Anything by Jakob Dylan, Bruce Springsteen-Wrecking Ball, Pete Seeger sessions, the Highwaymen, 3:10 to Yuma soundtrack, Master and Commander soundtrack, Winter Soldier, Moana and Pacific rim soundtracks. Those are some of my favorites for long drives though I've never done desserts, its usually long boring highways and I really love a good soundtrack to drive to. I tend to go from stuff I sing along to, to soundtracks that push me musically to move.
All road trip mixes should include Viva Las Vegas. Doesn't matter if you're actually going to Vegas.
Stuff you sing along to, to help keep you awake. I lean towards country for my road trip mixes, and lots of chicks-with-guitars type stuff like the Indigo Girls. Every fourth or fifth song is punk or rock, again for the awake-keeping.
Some of the Mad Max Fury Road soundtrack works, especially for the awake-keeping.
Audiomachine's Tree of Life album works. So does their Chronicles album. They show up on sales charts as classical, but what they make is production music- music for movie, tv, and video game trailers and advertising. It's very much 'you have three to four minutes to set a mood, GO'. I found it useful for the long stretches of corn and soybeans when I was driving across the country a few years ago.
I can also suggest Thomas Bergersen's album Sun. He's one half of the composer duo Two Steps From Hell; they mostly do production music, too, but every so often Bergersen and the other guy, Nick Phoenix, pursue their own artistic interests on individual albums. Sun has some lovely mood stuff.
